According to Ivan, the last liquor manufacturing license issued to any local party dates back almost a century ago, leaving them without any recent reference for their attempt. The absence of garage breweries for high-proof alcohols like gin in Hong Kong further complicated matters, as no matter the quantity, one cannot bypass the Hong Kong Customs and Excise Department. This meant that everything, from securing their current studio in Chai Wan and aligning it with government regulations to importing their customized copper still, "Luna," from Germany, had to be accomplished before the distillery could secure its license. This is a nerve-wracking bet, as there lingered a slim chance that all their investments could go in vain.
